Carmine Pecoraro

Culinary Director, One & Only Royal Mirage

Carmine Pecoraro has spent the last 24 years cooking in some of the world’s most luxurious spots. The South African/ Italian Chef has worked at the Michelin-starred Waldo’s Restaurant in Berkshire, UK in 1999 as a demi chef de partie. From there, he moved onto the Number #1 Restaurant, also Michelin-starred, in Scotland’s famous Balmoral Hotel.

He moved to the Middle East in 2003, joining the Burj Al Arab’s F&B team as Chef de Cuisine. He then became Executive Sous Chef at Madinat Jumeirah before moving to Emirates Palace for the same position.

After gaining wonderful work experiences, he joined JW Marriott Marquis in Dubai as Executive Chef before joining the pre-opening team at Atlantis, The Royal. Following that stint he joined Hilton’s Conrad Etihad Towers in the UAE capital.

He has recently retuned back to Dubai to take up the prestigious role of culinary director of the one and only royal mirage

Pecoraro has served A-list Hollywood celebrities and prepared meals for royals over the course of his career.
