High efficiency electric fryer made entirely of AISI 304 stainless steel with Scotch Brite finish, worktop 20/10 mm thickness. This high efficiency fryer has one Y-shaped molded tank, without welds, with widely rounded corners for the purpose of easier cleaning in total safety for the user. The tank has a large cold zone for the stabilization of cooking residue to ensure a quality frying process, and a large-diameter (Ø38 mm - Ø1.5inch) bottom oil drain that drains the oil into the drip pan. An oil collection and filtering trolley is integrated into the overall shape of the high efficiency fryer; this trolley is equipped with an internal AISI 304 stainless steel fine-mesh filter up to 100micron, easily cleanable (dishwasher) for a continuous reuse of the filter. Hinged door with a particular handle that allows the door to open to 90° even when approaching sideways with another machine. Heating system is achieved by a flat-geometry, high-efficiency, tilting heating element, lifted by springs via self-balancing and self-stabilizing system; this heating element is conceived to be functional to minimize energy consumption and completely removable from the cooking tank. This high efficiency fryer is characterized by an intuitive and easy-to-use 7” Touch Screen interface, a manageable working temperature up to 185°C, an energy-saving mode, a system that allows to set up and recall if necessary up to 24 different recipes, a “Melting” program, a remote control by Wi-Fi system, an intelligent cooking system (ICS) that corrects human mistakes, an express filtration system that allows to filter the oil in 4 minutes, a cleaning program with detergent tablets.
